Windy, snowing hard and a Fresh Fish Chowder recipe to weather it all.

We remain under a winter storm warning, it’s snowing horizontally out there and I’m clocking wind gusts in the lower 20’s.

This morning we have snow with gusty  winds as high as 40 MPH this morning. High 33 °F. Winds N at 20 to 30 mph. Chance of snow 100%. 3 to 5 inches of snow expected.

Tonight we’ll have a 50% chance of snow showers with breaks in the overcast. Low near 20°F. Winds WSW at 5 to 10 mph.

FRESH FISH CHOWDER

You can use almost any fish in this chowder—we’ve suggested halibut.

2 tbsp olive oil

1 large garlic clove, minced

1 small onion, chopped

1 large green pepper, chopped

1 lb crushed tomatoes

1 tbsp tomato paste

½ tsp dried basil

½ tsp dried oregano

¼ cup dry red wine

Dash of salt and pepper

½ cup uncooked white rice

½ lb fresh halibut, cubed

2 tbsp chopped parsley

1.                  Heat the olive oil in a 3-quart saucepan.  Add the garlic, onion, and green pepper; sauté for 10 minutes over low heat until vegetables are tender.

2.                  Add the tomatoes, tomato paste, basil, oregano, wine, salt, and pepper.  Let simmer for 15 minutes.  Add the rice and continue to cook for 15 minutes.

3.                  Add the halibut and cook for about 5 to 7 minutes until fish is cooked through.  Garnish stew with chopped parsley and serve.
