Snow, wind, drifting snow and a peanut butter-chocolate parfait

There is a real nasty that’s going to land on us today and tonight.  I sure hope you’re ready for it.

This morning we have wind and periods of snow with 5 to 8 inches expected. High will reach 32°F. Winds will be from the NNE from 25 to 35 mph.

Tonight we’ll have snow with gusty winds (Possible 40 MPH gusts) at times in the evening. Low around 30°F. Winds N at 20 to 30 mph. 5 to 8 more inches of snow expected.

The readings from my weather instruments are:

Humidity is 59%, the Dew Point is 17.2°F and the outdoor temp is 29.8°F.

The wind direction is   East Northeast between 8.1 MPH and 9.8 MPH, generating a wind chill of 20.3°F.

The Relative pressure is 29.61, the Absolute pressure is 29.41 and falling with a weather graphic indicating snow.

The UV rating is 0 out of 16, Sunrise is 6:55 a.m. Sunset is 6:42 p.m., Moonrise is 4:59 a.m., Moonset is 2:51 p.m. and the moon phase is waning crescent being 16% illuminated.

 We haven’t received any snow YET, but it’s coming fast.

CHOCOLATE PEANUT BUTTER PARFAITS

2 Tblsp. chunky peanut butter

2 Tblsp. plus 2 cups cold milk

1 cup plus 6 Tblsp. Cool Whip

1 package instant chocolate fudge pudding mix

3 Tblsp. finely chopped salted peanuts

1.      In a small bowl, combine peanut butter and 2 Tblsp. milk. 

2.      Fold in 1 cup Cool Whip; set aside.

3.      In another bowl, whisk remaining milk with the pudding mix for 2 minutes.  Let stand 2 minutes for soft set.

4.      Spoon half of the pudding into six parfait glasses or dessert dishes. 

5.      Layer with reserved peanut butter mixture and remaining pudding.

6.      Refrigerate for at least 1 hour. 

7.      Before serving, garnish each parfait with 1 Tblsp. Cool Whip and 1 ½ teaspoons peanuts.

Important Note: Reduced fat peanut butter and fat-free milk work well in this recipe as well as a sugar-free pudding mix.
