Warmer temps and a Salmon Tarragon
This morning we have some sun with increasing clouds this afternoon. High 39°F. Winds NNE at 10 to 20 mph.

SALMON TARRAGON
Serves: 4
1 lb. salmon fillet, cut into 4 pieces
¼ cup fresh lemon juice
½ tsp. dried tarragon
Pepper
1 tbsp. pimentos, drained, chopped
- Wash and pat dry fish fillets.
- Mix ¼ cup fresh lemon juice, ½ tsp. tarragon and a few dashes of pepper.
- Arrange fish in a glass baking dish, thick sides outward, and spoon marinade over fillets. Let rest a few minutes to absorb flavor.
- Cover with wax paper and microwave on Medium High (70%) for 5 to 6 minutes, until fish flakes easily when pierced with fork. Turn mid-cycle for even cooking. Garnish with pimentos.
