Sun, below freezing temps and a basic cake recipe

How about a basic cake recipe for a change?

YELLOW CAKE

1 ¾ cups all-purpose flour

½ Tblsp. baking powder

¼ tsp. salt

½ cup milk

½ tsp. vanilla

1 stick butter, very soft

1 cup sugar

2 eggs, room temperature

Preheat oven to 350.

In a large bowl, mix flour, baking powder, and salt.  Add milk, vanilla, softened butter, sugar, and eggs.  Stir until smooth, pour into an 8"x8" greased baking pan.

Bake 25-30 minutes or until toothpick comes out clean from middle of cake.

Frost as desired.  Sweetened whipped cream with crushed strawberries is really good as a frosting. Of course there is always chocolate frosting, nice and thick on top.

Options:  add chocolate chips (any size), nuts, etc.  Or split and fill with vanilla pudding, top with chocolate frosting.

This recipe can easily be doubled.  Bake in two 8" cake pans, or one 9"x13" pan.  Check baking time accordingly.
