MIXED BEAN SALAD

Serves:  8—1/2 cup

16-oz. can cut green beans, rinsed and drained

16-oz. can red kidney beans, rinsed and drained

16-oz. garbanzo beans, rinsed and drained

½ cup sliced ripe olives

¼ cup chopped fresh parsley

½ cup fat-free Italian dress

¼ tsp. dried mined garlic

·         In a medium bowl, combine 1 can green beans, 1 can kidney beans, 1 can garbanzo beans, ½ cup sliced olives and ¼ cup chopped fresh parsley.

·         Add ½ cup Italian dressing and ¼ tsp. dried mined garlic.

·         Mix gently to combine.

·         Cover and refrigerate at least 2 hours.

·         Gently stir again just before serving.
