It’s really crappy out there, take your time, your work isn’t going anywhere.

This morning we have rain, ending later this morning. Breaks of sun by this afternoon. High around 45ºF. Winds from the NW at 10 to 15 mph. Chance of rain 100%. Rainfall around a quarter of an inch.

Tonight we’ll have a few clouds and a low around 34ºF. Winds WSW at 5 to 10 mph.

GOLDEN TURKEY CASSEROLE

Serves 4 to 6

2 ½ cups cubed cooked turkey

1 (8 oz) can pineapple chunks or tidbits, drained

½ cup apricot preserves

1 can cream of chicken soup, undiluted

1 (8 oz) can sliced water chestnuts

In a bowl, combine all ingredients, plus 1/3 cup water, mixing well.  Transfer to a buttered 2 quart dish.  Bake uncovered at 350 degrees for 35 minutes or until thoroughly heated.  Serve over hot cooked rice.

*FRENCH CHOCOLATE ORANGE MOUSSE

 

Serves 4

1 (4 serving) package sugar-free instant chocolate fudge pudding mix

2/3 cup nonfat dry milk powder

1 cup unsweetened orange juice

¾ cup plain fat-free Yogurt

½ cup Cool Whip free

1 (11-oz) can mandarin oranges, rinsed and drained

3 (2½-inch) chocolate graham crackers made into fine crumbs

 

In a large bowl, combine dry pudding mix, dry milk powder, and orange juice.   Mix well using a wire whisk.  Blend in yogurt and Cool Whip Free.  Reserve 4 mandarin oranges.  Gently stir remaining mandarin oranges into pudding mixture.  Evenly spoon mixture into 4 dessert dishes.  Sprinkle graham cracker crumbs evenly over tops and garnish each with a reserved mandarin oranges.  Refrigerate for at least 30 minutes.
