Good Morning Augusta

Tonight we have the brightest full moon of the year and Meteor showers tonight and tomorrow night. And: “Lucy-light, Lucy-light, shortest day and longest night.”  That’s tonight as well.

This morning we have sunny skies to start, then a few afternoon clouds. High will reach 29ºF. Winds will remain out of the W at 10 to 15 mph.

Tonight we’ll have variable cloudiness with snow showers and a low of 24ºF. Winds SSW at 5 to 10 mph. Chance of snow 40%.  This will make it difficult to see the meteor showers.

We have received a total of roughly 6 inches of snow from that storm that dumped on us yesterday.

Here are two more recipes, one for dinner and one dessert.

PORCUPINES WITH RICE

Serves 8

1 lb ground lean turkey

½ cup chopped green pepper

½ cup chopped onion

¼ tsp garlic powder

1 egg beaten

2 tbsp parsley

½ tsp thyme

¼ tsp pepper

1 14 ½ oz stewed tomatoes diced

1 cup brown or wild rice

2 cups cooked noodles

Saute` onions and peppers.  Add ground turkey, all spices, egg and mix together forming into balls.  Roll into rice.  Put meat balls in baking pan which has been sprayed with cooking spray; pour can of tomatoes over mixture.  Bake at 350 degrees for 30 to 45 minutes.  Serve over hot noodles.

Exchanges:  2 vegetables; 1 ½ meat; 1 ½ starch

Calories:  221; fat:  6 gm; protein:  15 gm; carbohydrate:  27 gm; sodium:  374 mg; fiber:  1 gm. Using Leftover Tu

For Dessert, mostly for the kids:

COOKIES AND CREAM PIE

Makes 8 servings

1 ½ cups cold milk (or ½-cup dry milk powder and 1 ½ cold water)

1 pkg ( 4 serving size) JELL-O Vanilla sugar free Instant Pudding and Pie Filling

1 tub (8 oz) COOL WHIP Free whipped topping, thawed

1 cup chopped OREO chocolate sandwich cookies

1 OREO Pie crust

Pour milk into large bowl.  Add pudding mix.  Beat with wire whisk 2 minutes.  Let stand 5 minutes.  Gently stir in whipped topping and chopped cookies.  Spoon into crust.  Freeze 6 hours or overnight until firm.  Let stand at room temperature or in refrigerator 15 minutes or until pie can be cut easily.  Garnish with additional chocolate sandwich cookies.  Store left over pie in freezer.
