1 bag (24 oz) frozen diced potatoes with onions and peppers

½ tsp pepper

2 cups broccoli flowerets

1 ring (about ¾ lb) bologna or smoked sausage

3 slices process American cheese, cut diagonally in half

Heat oil in 10-inch skillet over medium-high heat.  Add potatoes, oregano and pepper.  Cover and cook 8 to 10 minutes, stirring occasionally, until potatoes are light brown.  Stir in broccoli; add bologna.  Cover and cook about 15 minutes or until bologna is hot.  Top with cheese.  Cover and heat until cheese is melted.

Pick up broccoli flowerets at the salad bar in your grocery store, or buy packaged washed and trimmed broccoli to make quick work of this recipe.
