#MEwx Sun, clouds, cool temps and a Jambalaya recipe to die for

Good morning Augusta.

I’ve put up a Ambient WS 5000 weather station where you can view real time weather readings online here.

This morning we have mostly sunny skies with highs in the mid 50s. Winds are northwest around 10 mph gusting to 20 mph.

Tonight we’ll have mostly clear conditions with a chance of frost in sheltered locations after midnight. Lows will be in the mid 30s with light and variable winds.

We didn’t receive any rain here over the past 24 hours.

The wind is West between  1.1 MPH and 7.8 MPH.

The Relative pressure is 29.79, the Absolute pressure is 29.59 and rising with a weather graphic indicating sun and clouds.

The  outdoor temperature is 42.4°F, the dew point is 34.7°F, the heat index is 42.4°F and the humidity is 74%.

Visibility is 10.0 miles / 16.1 kilometers with partly cloudy skies at the moment.

The UV index is 0 placing the average person at low risk, the solar radiation reading is 19.6W/m2, the moon phase is waxing gibbous and the moon is 97.5% illuminated. Sunrise is 6:46 AM, sunset is 6:09 PM, moonrise is 5:56 PM, Moonset is 5:08 AM and we’ll have 11 hours 22 minutes of daylight today.

This recipe definitely isn’t chili but trust me, it’s fantastic! “Try it you’ll like it”

 

Miss Lil’s Jambalaya

This recipe is from a place called “Bob the Chef” which went out of business a long time ago. But this recipe proves the old saying that some things are “gone but not forgotten.”

1/2 lb margarine

2 lb smoked beef sausage

2 c. chopped onions

2 c. chopped celery

1 c. diced red pepper

2 c. chopped canned tomatoes

2 lb diced boneless chicken

1.5 lb shrimp (P&D)

2 tbsp crushed red pepper

4 tbsp Cajun seasoning

2 c. tomato puree

1/2 cup dry chicken base

3 c. rice (uncooked)

3 c. water 

Sauté onions, celery, peppers, chicken, and sausage in margarine for 10-15 minutes.

Add seasonings, tomatoes, and tomato puree.

Continue to cook for 5 minutes more.

Add rice and stir until mixed well.

Add chicken base and water.

Bring to a boil for 20-25 minutes.

    Most of the water should be absorbed and the rice should be a little moist.

Add shrimp, cook only until shrimp is done (takes only a few minutes). 

Yield: 8 lbs.

(I’d put some good bourbon in it as well, but not while it’s near a boil. You want the Bourbon to retain its kick, not boil off.)
