#MEwx Fog, sun and warm temps with Pumpkin and Squash Pie

This morning we have patchy fog and mostly sunny skies. Highs will be in the mid 60s with light and variable winds, becoming south around 10 mph this afternoon.

Tonight we’ll have partly cloudy conditions during evening hours, becoming mostly cloudy. Patchy fog in the evening with areas of fog after midnight. Lows in the mid 40s with light and variable winds.

We didn’t receive any rain here over the past 24 hours.

This pie is easy to make and helps you get rid of that squash and pumpkin guts from that jack-o-lantern you had to scoop out for the kids

PUMPKIN/SQUASH PIE

Serves 8

 

1 unbaked 9 inch deep-dish pie shell

2 eggs or ½ cup egg substitute

2 cans (16 oz) pumpkin OR squash

1 tsp pumpkin pie spice

2/3 cup low fat evaporated milk

½ cup Splenda

 

Beat eggs lightly in large bowl.  Stir in pumpkin, pumpkin pie spice and low fat evaporated milk.  Pour into pie shell.  Cut 2 inch wide strips of foil and cover pie crust edges.   This will keep pie crust from getting too brown.  Bake at 400 degrees for 15 minutes.  Reduce temperature to 350 degrees and bake for 50 more minutes or until knife inserted in center come out clean.  Cool.
