CRUNCHY PEA SALAD
Serves 8 (3/4 cup)
3 cups frozen peas, thawed
1 cup diced celery
1 ¾ cups chopped cauliflower
¼ cup chopped white onion
½ cup (2 oz) chopped dry-roasted cashews
2 tbsp Bacon Bits
¼ cup fat free Ranch dressing
½ cup fat-free mayonnaise
2 tsp dried parsley flakes
1 tbsp Splenda
In a large bowl, combine peas, celery, cauliflower, onion, cashews, and Bacon Bits. In a small bowl, combine Ranch dressing, mayonnaise, parsley flakes, and Splenda. Mix gently to combine. Cover and refrigerate at least 30 minutes. Gently stir again just before serving.
HINT: Thaw peas by placing in a colander and rinsing under hot water for one minute.
