How about fish over some lemon rice? IT really sets it off in a good way and is also darn good for you.

FILLETS WITH LEMON RICE

Serves 4

2 tbsp reduced-calorie margarine

1 1/3 cups uncooked instant rice

½ cup chopped onion

½ tsp lemon pepper

1 tsp dried parsley flakes

2 tbsp lemon juice

1 cup water

16 oz white fish, cut into 4 pieces

½ tsp paprika

Melt margarine in a 1-cup glass measure.  Set aside.  In an 8-by-8-inch glass-baking dish, combine rice, onion, lemon pepper, parsley flakes, lemon juice, and water.  Wash fish pieces in cold water and pat dry.  Arrange fish over top of rice mixture.   Drizzle melted margarine over top of fish and sprinkle paprika over top.  Cover.  Microwave on HIGH 10 to 12 minutes or until fish flakes easily.  Place baking dish on a wire rack and let set, covered, 2 to 3 minutes.  For each serving, evenly spoon about ½ cup rich on place and top with 1 piece of fish.
