#MEwx Cold, snowy and rainy with another delicious meal recipe

ZUCCHINI QUICHE
Serves: 8
1 tsp. cornstarch
¼ tsp. dried whole oregano
1 cup canned, stewed tomatoes
1½ cups skim milk
4 eggs
1 tbsp flour
2 cups shredded zucchini
½ cup chopped onion
½ cup shredded Swiss cheese
½ cup shredded low-fat process American cheese
2 tbsp. grated Parmesan cheese
Vegetable cooking spray
· Combine 1 tsp. cornstarch and ¼ tsp. oregano in a small saucepan.
· Add 1 cup tomatoes; stirring well; bring to a boil. Reduce heat, and simmer 2 minutes or until thickened. Keep warm.
· Combine 1 ½ cups milk, 4 eggs, and 1 tbsp. flour in a large bowl; beat well using a wire whisk. Add 2 cups zucchini, ¼ cup onion, and ½ cup shredded Swiss cheese, ½ cup Low fat American cheese, and 2 tbsp parmesan cheese, stirring well.
· Pour egg mixture into a 9-inch round quiche dish coated with cooking spray. Bake at 350 degrees for 1 hour.
· Spoon tomato mixture over quiche. Cut into wedges, and serve warm.
