Okay, I’m going to post a few days worth of recipes featuring what to do with some of that leftover turkey, other than those fantastic cold turkey sandwiches!!

TURKEY BROCCOLI CASSEROLE

Serves 6 or 8

1 can cream of chicken soup

¾ cup nonfat milk

3 cups diced cooked turkey

1 (10 oz) box) frozen broccoli spears, thawed

1 (16 oz) box stuffing mix (prepared according to directions) OR use 8 to 10 cups of leftover dressing

Heat soup and milk, just enough to be able to mix well.  Pour into a greased 9” x 13” baking dish.  Layer turkey over the soup; layer the broccoli on top.  Top with stuffing or stuffing mix.  Bake covered at 350 degrees for 50 minutes.
