warmer, sun and a low calorie chocolate cake recipe

Okay, yesterdays recipe didn’t exactly meet with rave reviews.  After all, chocolate is it’s own major food group, isn’t it?  So how about a low calorie chocolate cake?

Note how many servings and also note that there are NO frosting options listed. The idea is, slow down on the caloric intake.  Hmmm. I’ll try.  Really I will.

LOW-CAL CHOCOLATE CAKE

24 servings

1½ cup flour                              

1/4 cup granulated fructose - or other sugar replacement

2/3 cup liquid shortening

1 cup low fat milk (2%)

½ cup unsweetened cocoa                 

2 eggs

1½ tsp baking soda                            

1 tsp salt                          

Preheat oven to 350 degrees.  Grease and flour a 13”x 9" cake pan. Combine all ingredients in a mixing bowl and beat just until blended. Pour into prepared pan and bake for 40-45 minutes. Let cool.
