Cold with a lot of snow on the way

Just for your information: the Old farmer’s almanac has “nailed it” for temperatures and snow for this month.  Still think the Almanac is a bunch of fake news?

This morning it’s cloudy with snow developing during the afternoon. High will reach 27ºF. Winds will be from the NE at 10 to 15 mph. Chance of snow 100%. 1 to 3 inches of snow expected.

Tonight we’ll have snow. Winds will increase overnight. Lows will be 22ºF. Winds will be from the NE at 25 to 35 mph. Chance of snow 100%. 8 to 12 inches of snow is expected. Winds could occasionally gust over 40 mph.

BLACK BOTTOM LEMON CREAM PIE

8 servings

1 (4-serving) package JELL-O sugar-free instant chocolate pudding mix

1 1/3 cups Non fat dry milk powder

2 ¼ cups of water

1 (6-ounce) Keebler shortbread piecrust

1 (4-serving) package JELL-O sugar-free instant vanilla pudding mix

1 (4 serving) package JELL-O sugar-free lemon gelatin

½ cup Cool Whip Free

1 tbsp mini chocolate chips

In a large bowl, combine dry chocolate pudding mix, 2/3 cup dry milk powder, and 1 cup water.  Mix well using a wire whisk.  Spread mixture into piecrust.  In another large bowl, combine dry vanilla pudding mix, dry gelatin, remaining 2/3 cup dry milk powder, and remaining 1 ¼ cups water.  Mix well using a wire whisk.  Blend in Cool Whip Free.  Spread mixture evenly over chocolate layer.  Evenly sprinkle chocolate chips over the top.  Refrigerate for at least 1 hour.  Cut into 8 servings.

Some of you have noted the somewhat unusual layout of the recipes I post here, namely that I begin each recipe with the exact amount of each recipe’s ingredients.

I do this for a reason, that being that each recipe is “blind friendly.”  Being blind myself, I used to teach cooking to adults who had recently lost their eyesight.  So, in an effort to make recipes easier for those among us who are like me, blind, I modify each recipe to list the ingredients measurements first, the make certain that the directions read, in chronological order, when and how to add each one.

While blindness is a pain in the back side, it isn’t the end of the world by any means.  Now go have a piece of pie.
