#MEwx Sunny and warm with Baked egs with Canadian Bacon, Spinach and cheese

This morning we have clouds, becoming partly sunny. Some areas of fog. Visibility one quarter mile or less at times. Highs around 70°F with light and variable winds, becoming southwest around 10 mph gusting to 20 mph this afternoon.

Tonight we'll have partly cloudy skies with isolated showers and thunderstorms. Patchy fog after midnight with lows in the lower 50s, winds will be south around 10 mph gusting to 20 mph in the evening, becoming light and variable.

We received 0.47 inches of rain here over the past 24 hours.

The wind is North northeast between  1.3 MPH and 2.0 MPH.

The Relative pressure is 29.35, the Absolute pressure is 29.15 and rising with a weather graphic indicating sun and clouds with rain in the offing.

It's breakfast time!

 

BAKED EGGS WITH CANADIAN BACON OR HAM, SPINACH, AND CHEESE

3 Tablespoon butter, plus more to butter the ramekins

2 Tablespoon minced onion

Salt and pepper

6 oz. baby spinach, washed and chopped

4 slices Canadian bacon or ham, chopped

4 large eggs

4 Tablespoon cream or half and half

1 oz. grated cheddar cheese

Toast of your choice

Heat oven to 350⁰ and arrange rack in the middle.  Butter 4 ramekins or small ovenproof dishes.  Set aside.

Melt 1 Tablespoon butter in large skillet over medium heat.  Add onion, season with salt and pepper, and cook until soft, about 1-2 minutes.  Add spinach and cook until spinach is well wilted, about 2-3 minutes.

Place ham on bottom of ramekins, top with spinach.  Crack 1 egg into each ramekin, cover each egg with 1 T. cream, and top with grated cheese.

Put ramekins on baking sheet and bake (rotate pan halfway through baking), until whites are just set but yolks are still runny, about 15-18 minutes.  I like our eggs firmer, so I let mine bake about 24 min.

Serve with toast.
