#MEwx Mild temps, fog, rain and Golden Fish Cakes

I've put up a new Ambient WS 5000 weather station where you can view real time readings online here.

This morning we have fog and clouds with a slight chance of rain . Highs in the upper 60s with light and variable winds. Tonight we'll have partly cloudy conditions with patchy fog after midnight. Lows in the lower 50s with light and variable winds.

We received 2.76 inches of  rain here for the entire rain event that began yesterday.

The wind is North Northeast between  2.0 MPH and 3.6 MPH.

The Relative pressure is 29.96, the Absolute pressure is 29.76 and rising with a weather graphic indicating sun.

The  outdoor temperature is 57.9°F, the dew point is 57.6°F, the heat index is 57.9°F and the humidity is 99%.

GOLDEN FISH CAKES      

Ingredients:

 

1 pound flaked cooked whitefish, cod or haddock

1 1/2 cups soft bread crumbs

3 eggs, beaten

2 to 4 tablespoons water

1 medium onion, chopped

2 tablespoons mayonnaise

1 1/2 teaspoons ground mustard

1 teaspoon dried parsley flakes

3/4 teaspoon salt

1 1/2 cups Italian seasoned bread crumbs

2 tablespoons vegetable oil

Tartar sauce and lemon wedges, optional

Directions:

1. In a bowl, combine the first nine ingredients; mix well. Shape into 12 patties, adding additional

water if needed; coat with the Italian bread crumbs. In a large skillet, cook the patties in oil for 4 to 5

minutes on each side or until lightly browned. Serve immediately with tartar sauce and lemon if

desired. Yield: 6 servings.
