#MEwx Sun, clouds, warm temps and Ham/apple topped biscuits

This morning we have mostly cloudy skies, becoming partly sunny. Patchy fog this morning with visibility one quarter mile or less at times. Highs around 70°F with south winds around 10 mph.

Another great item for breakfast is:

HAM-AND-APPLE-TOPPED BISCUITS

Serves:  6

 

1 ½ cups 97% fat-free ham or extra-lean ham

3 small unpeeled chopped cooking apples

½ cup raisins

1 cup Sugar Free Maple Syrup

¾ tsp apple pie spice

6 warm baked refrigerated buttermilk biscuits

 

In a large skillet sprayed with butter-flavored cooking spray, sauté’ ham and apples over medium heat for 5 minutes, stirring occasionally.  Add raisins, maple syrup, and apple pie spice.  Mix well to combine.  Lower heat and simmer 2 to 3 minutes.  For each serving, place 1 biscuit on plate and spoon about ½ cup ham mixture over top.
