Okay, freeze the rest of the turkey, but keep the remaining Leftove r turkey recipes for use with it.

GOLDEN TURKEY CASSEROLE

Serves 4 to 6

2 ½ cups cubed cooked turkey

1 (8 oz) can pineapple chunks or tidbits, drained

½ cup apricot preserves

1 can cream of chicken soup, undiluted

1 (8 oz) can sliced water chestnuts

In a bowl, combine all ingredients, plus 1/3 cup water, mixing well.  Transfer to a buttered 2 quart dish.  Bake uncovered at 350 degrees for 35 minutes or until thoroughly heated.  Serve over hot cooked rice.
