We received roughly 304 inches of light and fluffy snow here over the past 24 hours.

This recipe isn’t as quick and easy as a crock pot or instant pot meal, but it’s great.

EASY PORK FRIED RICE

4 servings

 

1 tbsp vegetable oil

8 medium green onions, sliced (½ cup) 1 clove garlic, finely chopped 1½ cups water

½ cup Spicy Barbecue Sauce 

1 tbsp soy sauce

1 cup frozen mixed vegetables

2 cups uncooked instant rice

1 Spicy Barbecued Pork Tenderloin, cubed

 

Heat oil in 10-inch skillet over medium-high heat. Cook onions and garlic in oil about 2 minutes, stirring occasionally, until onions are crisp-tender.  Stir in water, Spicy Barbecue Sauce, soy sauce and vegetables. Heat to boiling; remove from heat. Stir in rice and pork. Cover and let stand about 5 minutes or until liquid is absorbed.
