Here are two really great holiday baked goods. Enjoy.

Holiday CAJUN CHRISTMAS MIX 

2 (12 oz.) cans Blue Diamond Smokehouse Almonds

6 c. Kellogg's Crispix cereal

1 c. Pepperidge Farm Parmesan Cheese Goldfish Tiny crackers

1/4 c. butter

1 tbsp. Worcestershire sauce

1/2 tsp. paprika

1/2 tsp. thyme leaves

1/4 tsp. black pepper

1/4 tsp. hot pepper sauce

 Preheat oven to 250F. In a large shallow roasting pan, combine almonds, cereal and Goldfish crackers. Melt butter and stir in seasonings. Pour over almond mixture and toss to coat. Bake 1 hour, stirring every 20 minutes. Spread on paper towel to cool. Store in air tight container. Makes 9 cups

 

CRANAPPLE WALNUT CAKE

Serves 8

1 cup + 2 tbsp all purpose flour

1 (4 serving) package JELL-O sugar-free instant vanilla pudding mix

1 tsp apple pie spice

2 tbsp Splenda

1 tsp baking soda

½ coarsely chopped fresh or frozen cranberries

2 cups (4 small) cored, unpeeled, cooking apples and 1/4 cup finely chopped walnuts

½ cup Ocean Spray reduced-calorie cranberry juice cocktail

1 egg or equivalent in egg substitute

½ cup unsweetened applesauce

 

Preheat oven to 350 degrees.  Spray an 8-by-8 baking dish with butter-flavored cooking spray.  In a large bowl, combine flour, dry pudding mix, apple pie spice, Splenda, and baking soda.   Stir in cranberries, apples and walnuts.  In a small bowl, combine cranberry juice cocktail, egg, and applesauce.  Add liquid mixture to flour mixture.  Mix gently to combine.  Spread batter evenly into prepared baking dish.  Bake for 45 to 50 minutes or until a toothpick inserted in center comes out clean.  Place baking dish on a wire rack and allow to cool.  Cut into 8 servings.

 

HINT:  Good served warm with Wells’ Blue Bunny sugar- and fat-free ice cream or cold with Cool Whip Lite.
