Okay, it’s cold outside and things are getting frantic up to the “big day.” So, drop the fixings for this into the crock pot, turn it on and go get other things done.

BEEF STEW – Crockpot

1 lb lean beef chunks

2 – 6  medium potatoes – halved

A handful of baby carrots

1 package Onion Soup mix

1 cup  water

Cook on Low     8 – 10 hours

               High    6 -  8 hours

 

½  hour before serving:  microwave about 1 cup of vegetables of your choice -  corn, peas, lima beans – for 5 minutes.  Add to pot and simmer
