We’re now under a winter storm watch/warning – read it in the post preceding this one.

Today it’s going to be cloudy with a slight chance for snow this afternoon. Highs in the upper 20s with northeast winds 10 to 15 mph gusting up to 25 mph.

Tonight we’ll have snow accumulating 1 to 3 inches. Lows in the mid 20s. Northeast winds 10 to 15 mph gusting to 30 mph.

The wind direction is East between 12.0 MPH and 15.5 MPH.

Visibility is 10.0 Miles / 16.1 Kilometers with overcast skies to 5500 ft.

We didn’t receive any snow here over the past 24 hours, but it’s definitely on it’s way. Hunker down folks, it’s winter time.

Keep that leftover Thanksgiving Turkey handy.

TURKEY AND DRESSING PIE

 

Serves  4 to 6

 

1 (6 oz) box stuffing mix OR 5 or 6 cups leftover dressing

3 tbsp margarine, melted

2 ½ cups finely chopped cooked turkey

1 cup shredded cheddar cheese

4 eggs, beaten

2 cups low fat half and half

 

Combine dressing, seasoning packet and margarine; mix well.   Press on bottom and sides of a buttered 2 quart baking dish.  Bake at 400 degrees for 5 minutes.   Cool.  Combine turkey and cheese; spread over dressing mixture in pan.  Combine eggs and half and half; beat well.   Pour over turkey mixture.  Reduce oven to 325 degrees.  Bake uncovered for 35 to 40 minutes or until set.

 

 

*GOLDEN TURKEY CASSEROLE

 

Serves 4 to 6

 

2 ½ cups cubed cooked turkey

1 (8 oz) can pineapple chunks or tidbits, drained

½ cup apricot preserves

1 can cream of chicken soup, undiluted

1 (8 oz) can sliced water chestnuts

 

In a bowl, combine all ingredients, plus 1/3 cup water, mixing well.  Transfer to a buttered 2 quart dish.  Bake uncovered at 350 degrees for 35 minutes or until thoroughly heated.  Serve over hot cooked rice.
