Warmer, very humid and Turkey Taco Wraps

Note: if you still have some frozen turkey in the back of the freezer left over from last thanksgiving, dig it out.

TURKEY TACO WRAPS

5 servings

1 lb ground turkey

1 cup salsa

10 taco shells

1 container (6 oz) frozen avocado dip, thawed

10 flour tortillas (6 inches in diameter)

1 cup shredded Cheddar cheese (4 oz)

Shredded lettuce

1 large tomato, chopped (1 cup)

Cook turkey in 10-inch skillet over medium heat, stirring occasionally, until no longer pink; drain. Stir in salsa; reduce heat. Simmer uncovered 5 to 10 minutes to blend flavors.  Heat taco shells as directed on package. Spread about 1 tbsp avocado dip over each tortilla to within 1 inch of the edge. Place taco shell on avocado dip in center of tortilla. Wrap flour tortilla up sides of ell.  Sprinkle cheese into taco shells. Spoon turkey mixture into taco shells. Top with lettuce and tomato.

Substitution: You can spread a cup canned refried beans, heated on the flour tortillas instead of the avocado dip.  Ground beef or bulk pork sausage can be used instead of the turkey.  Or heat 2 cups chopped cooked chicken with the salsa for a very quick and easy planned-over meal.
