Rain, flooding and the best Jambalaya recipe on planet earth.

Good Morning Augusta

We’re still under that Winter Weather Advisory and flood watch folks.  Slow down, don’t drive through standing water and remember, tonight the temp drops to 2°F.  You’ll need that electric blanket or at least two dogs.

Today’s Solar flux is 70, the solar wind speed is 334  Kilometers per second and the chance of a solar storm is 1%.

Yesterday’s recipe was chili for kids, today’s is more for adults, but I think you’ll like this one. I love this recipe, especially with the burbon.

Miss Lil’s Jambalaya

Bob the Chef's/Miz Lil's Jambalaya:

1/2 lb margarine

2 lb smoked beef sausage

2 c. chopped onions

2 c. chopped celery

1 c. diced red pepper

2 c. chopped canned tomatoes

2 lb diced boneless chicken

1.5 lb shrimp (P&D)

2 tbsp crushed red pepper

4 tbsp Cajun seasoning

2 c. tomato puree

1/2 cup dry chicken base

3 c. rice (uncooked)

3 c. water

Sauté onions, celery, peppers, chicken, and sausage in margarine for 10-15 minutes.

Add seasonings, tomatoes, and tomato puree.

Continue to cook for 5 minutes more.

Add rice and stir until mixed well.

Add chicken base and water.

Bring to a boil for 20-25 minutes.

Most of the water should be absorbed and the rice should be a little moist.

Add shrimp, cook only until shrimp is done (takes only a few minutes).

Yield: 8 lbs.

(I’d put some good bourbon in it myself)
