Clouds, morning snow showers and how to make scrambled French Toast

We’re under a special statement for snow showers dropping up to an inch around town, slow down.

This morning we have snow showers dropping one inch will give way to partly cloudy skies this afternoon. High 32°F. Winds light and variable.

Tonight we’ll have partly cloudy skies turning cloudy after midnight. Low 23°F. Winds SSW at 5 to 10 mph.

We didn’t receive any new snowfall here over the past 24 hours, but we’re getting a thick dusting right now.

With the messy weather coming up for this weekend, I think a good, flavorful breakfast would be good. It’s a twist on a standard French toast recipe.

SCRAMBLED FRENCH TOAST

2 eggs

1 cup milk

1 teaspoon vanilla

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

6 cups cubed day-old bread (1/2 inch cubes)

1 ½-2 tablespoons butter

¼ cup sugar (or to taste)

In a large bowl, beat eggs.  Add milk, vanilla, cinnamon, and nutmeg.  Add bread cubes and toss; let stand for 5 minutes.  Melt butter in a large skillet.  Add bread cubes and stir until cooked and browned.  Gradually add sugar; stir to coat evenly.  Cook until all sugar is dissolved, about 5 minutes.

3-4 servings.  1 serving = 1 cup, about 305 calories, 11 g fat, 127 mg cholesterol, 387 mg sodium.
