This morning we have snow, rain and sleet, then more rain this afternoon. Snow and sleet accumulation of 1 to 3 inches. Highs in the lower 40s with East winds 15 to 25 mph gusting to 45 mph.

Tonight we’ll have partly cloudy  skies during evening hours then clearing. Lows in the upper 20s with Southwest winds 10 to 15 mph gusting to 30 mph.

The outdoor temperature is 31.5°F, the dewpoint is 31.3°F and the wind chill is 24.6°F.

We’ve received roughly an inch  of snow here since the storm began and it’s border-line rain. It’s a long way from being over.

Today’s sunrise is 7:14 AM, sunset is 4:23 PM and we’ll have 9 hours 8 minutes of daylight today. Moonrise is 9:01 AM and Moonset is 6:57 PM. The moon phase is Waxing Crescent and is 6.1% illuminated. Our next Full Moon is on January 25 and our next new moon will be on February 9.

The wind velocity is between 6.9 MPH and 18.6 MPH from the East.

The Relative pressure is 29.49, the Absolute pressure is 29.29 and falling with a weather graphic indicating snor, rain  and overcast.

The Humidity is 99%, the UV index is 0 placing the average person at no risk and the solar radiation reading is 0W/m2.

Visibility is “variable” in the Lousey ranges depending on how hard it’s raining or snowing where you are. Stay the hell off the roads!

 

I’m going to stick with chicken meals for a while because you can do a lot with it.

Knock Your Socks Off Slow Cooker Chicken and Sausage

Ingredients:

1 1/2 lbs boneless skinless chicken breasts

1 package andoulle sausage (Or you can use smoked sausage, kielbasa, use what you like most)

1 8 oz package cream cheese, room temperature

1 cup chicken stock

1/2 cup white wine (you can also sub this with beer or chicken stock)

3 cloves of garlic minced

1 small yellow onion diced

2 tbs grainy mustard

1/2 tsp salt

scallions for garnish

serve over white rice or buttered noodles

Directions:

In a mixing bowl whip cream cheese with chicken stock, salt, garlic, mustard and wine until incorporated.

Place, chicken and sausage in the bottom of your crock pot. Place onions on top.

Pour cream cheese mixture over the top.

Cover and place on high for 4 hours or low for 5-6 hours, checking it occasionally to make sure it's not thickening too much. If it is, add more chicken stock or wine.

When you are ready to serve, you can place the meal in a baking dish and pop it under the broiler for a couple of minutes for some extra color. (this is optional, but I highly recommend it!)

Salt and pepper to taste, serve over rice, quinoa, or pasta.
