BUTTERSCOTCH GRAHAM CRACKER PARFAIT

Serves 4

1 (4 serving) package Jello sugar-free instant butterscotch pudding mix

2 cups skim milk

8 tbsp purchased graham cracker crumbs or 9 (2 ½-inch) graham cracker squares, made into crumbs

¼ cup Cool Whip Lite

2 maraschino cherries, halved

In a medium bowl, combine dray pudding mix and skim milk.  Mix well using a wire whisk.  Spoon ¼ cup pudding mixture into 4 parfait dishes.  Sprinkle 1 tbsp graham cracker crumbs over top of each.  Layer ¼ cup pudding mixture over crumbs.  Top each with 1 tbsp Cool Whip Lite and garnish with maraschino cherry half.  Refrigerate for at least 15 minutes.

HINT:  A self-seal sandwich bag works great for crushing graham crackers.
