Hot, muggy and Caesar Turkey Subs for lunch

Tonight we’ll have thunderstorms giving way to cloudy skies overnight. Low 68°F. Winds S at 5 to 10 mph.

CAESAR TURKEY SUBS

4 sandwiches

4 submarine sandwich rolls (6 to 8 inches) or 1 baguette (8 oz)

1/3 cup Caesar dressing

½ package (3.5-oz size) sandwich

sliced pepperoni

¾ lb sliced cooked turkey or chicken

4 slices (1 oz each) Colby-Monterey Jack cheese

4 slices tomato, cut in half

4 lettuce leaves

½ medium red onion,  thinly sliced

Cut rolls horizontally in half (if using baguette, first cut into fourths).   Spread dressing over cut sides of rolls.  Layer bottom halves of rolls with pepperoni, turkey, cheese, tomato lettuce and onion.  Top with roll tops; press gently.  Secure with toothpicks.  Cut each sandwich diagonally in half. 

Substitution: Use any of favorite deli meats and cheeses instead of the pepperoni, turkey and Colby-Monterey Jack cheese.
