Above freezing and a great Easter meal alternative

Happy Easter everyone.  I hope you find all of the Easter Bunny’s eggs and also find a parking space at church.

This morning we have clouds early becoming partly cloudy later in the day. High 49°F. Winds WSW at 10 to 20 mph.

Tonight we’ll have clouds and a low of 27 °F. Winds WNW at 10 to 15 mph.

If you prefer ham for easter dinner, but want something a bit different with it, try this:

HAM TETRAZZINI

Serves 6 (1 cup)

(IN THIS RECIPE, TURKEY COULD BE USED INSTEAD OF HAM.  ALL OTHER INGREDIENTS ARE THE SAME)

1 full cup extra-lean ham

½ cup chopped onion

1 (10 ¾ oz) can Healthy Request Cream of Mushroom Soup

¾ cup shredded reduced-fat cheddar cheese

1 cup frozen peas

2 tbsp canned chopped pimiento

2 tbsp fresh parsley or 2 tsp dried parsley flakes

1/8 tsp black pepper

2 cups chopped cooked spaghetti, rinsed and drained

In a large skillet sprayed with butter-flavored cooking spray, sauté ham and onion until onion is tender, about 5 minutes.   Stir in mushroom soup and cheddar cheese.   Cook over low heat, stirring often, until cheese melts.   Add peas, pimiento, parsley, black pepper, and spaghetti.  Mix well to combine.  Lower heat and simmer 5 to 10 minutes, stirring often.

HINT:  1 ½ cups uncooked spaghetti usually cook to about 2 cups.
