This morning it’s cloudy with a high of 42 ºF. Winds will be from the NNE at 5 to 10 mph.

Tonight it will be mostly cloudy with snow flurries and snow showers, especially during the overnight hours. Low will be around 30 ºF. Winds will be out of the ENE at 5 to 10 mph. Chance of snow 70%. Snowfall around one inch.

As much as I’d love to continue with dessert postings I do need to post “regular” food recipes.  Let’s try a fairly healthy one – I guess we ought to try to balance off the desserts, right?

GINGERED CHICKEN BREAST

Serves:  4

1 tbsp. fresh lemon juice

1½ grated fresh ginger

½ tsp. freshly ground black pepper

2 cloves garlic

4 boneless, skinless chicken breast halves

·         Combine 1 tbsp. lemon juice, 1½ tsp. ginger, ½ tsp. black pepper and 2 cloves of garlic in a small bowl.

·         Place the chicken breast in a deep bowl.  Pour the ginger mixture over the breasts, turning once to coat both sides.  Cover, and refrigerate for 30 minutes to 2 hours.

·         Spray a large nonstick skillet with cooking spray.  Heat the skillet on medium-high until hot.  Add the chicken.

·         Cook, turning once, until tender, about 8 minutes.
