Here’s another vegetarian recipe that sounds good.

BROCCOLI-WALNUT PARTY CASSEROLE

Serves 6

1 (16 oz) package frozen chopped broccoli

3 tbsp unbleached flour

2/3 nonfat dry milk

2 cups chicken broth

2 ½ cups dried bread cubes

1 tsp sage

1 tsp dried parsley flakes

½ cup chopped walnuts

Preheat oven to 400 degrees.  In a large saucepan, cook broccoli in water until just tender, about 10 minutes.   Drain well.   Place broccoli in an 8-by-8 inch baking dish sprayed with butter-flavored cooking spray.   In a covered jar, combine flour, dry milk powder, and 1 ¼  cups chicken broth.   Shake well to combine.   Pour mixture into a medium saucepan sprayed with butter-flavored cooking spray.   Cook over medium heat, stirring constantly, until mixture thickens and starts to boil.   Pour hot sauce over broccoli.  In a large bowl, combine bread cubes, sage, parsley flakes, walnuts, and remaining ¾ cup chicken broth.   Mix well to combine.   Sprinkle mixture evenly over top of broccoli mixture.  Bake 20 to 25 minutes or until top is crusty.   Place baking dish on a wire rack and let set 5 minutes.  Divide into 6 servings.
