#MEwx Hot today and a classic Yellow Cake recipe

The Red Sox lost to the Toronto Blue Jays yesterday afternoon 8-7. We are now 42 and 36.

Tonight we'll have partly cloudy skies this evening, then clearing. Lows in the lower 50s. Northwest winds 10 to 15 mph gusting to 25 mph this evening, becoming light

and variable.

Our outdoor temperature is 67.8°F, the humidity is 55% and the Dew Point is 51.1°F.

The wind direction is Northwest between 2.5 MPH and 4.9 MPH.

The Relative pressure is 29.75, the Absolute pressure is 29.55 and rising with a weather graphic indicating sun.

Visibility is 10.0 Miles / 16.1 Kilometers with clear and sunny skies.

The UV rating is 2 out of 16, Sunrise is 4:56 AM, Sunset is 8:27 PM, Moonrise is 12:06 AM,  Moonset is 10:49 AM  and the moon phase is waning Gibbous. 

I will resume posting Augusta RAW METAR readings if/when Augusta's airport ever resumes posting them.

Today's post is your basic, direct from your childhood classic Yellow Cake recipe. If you were raised "right" you will frost it with chocolate frosting.

YELLOW CAKE

1 ¾ cups all-purpose flour

½ Tblsp. baking powder

¼ tsp. salt

½ cup milk

½ tsp. vanilla

1 stick butter, very soft

1 cup sugar

2 eggs, room temperature

Preheat oven to 350.

In a large bowl, mix flour, baking powder, and salt.  Add milk, vanilla, softened butter, sugar, and eggs.  Stir until smooth, pour into an 8"x8" greased baking pan.

Bake 25-30 minutes or until toothpick comes out clean from middle of cake.

Frost as desired.  Sweetened whipped cream with crushed strawberries is really good as a frosting.

Options:  add chocolate chips (any size), nuts, etc.  Or split and fill with vanilla pudding, top with chocolate frosting.

This recipe can easily be doubled.  Bake in two 8" cake pans, or one 9"x13" pan.  Check baking time accordingly.
