LEMON ZEST RICOTTA CRÈME

Serves:  1

½ cup part-skim ricotta cheese

¼ tsp. grated lemon zest

¼ tsp. vanilla extract (I like lemon extract)

1 package sugar substitute

Mix together the ½ cup ricotta, ¼ tsp. lemon zest, ¼ tsp. vanilla extract and 1 packet sugar substitute in a dessert bowl.  Served chilled.
