This morning it’s Snowing with a slight chance of freezing drizzle, then snow likely and chance of freezing drizzle and drizzle this afternoon. Additional snow

accumulation of 1 to 3 inches. Ice accumulation around a trace. Highs in the lower 30s. Light and variable winds, becoming south around 10 mph this afternoon.

Tonight we’ll have Cloudy skies with a chance of drizzle and freezing drizzle this evening, then rain and sleet after midnight. Additional sleet accumulation up to 1 inch. Ice accumulation of up to a tenth of an inch. Not as cold with lows in the lower 30s. Light and variable winds.

We’ve received roughly 3 inches of snow so far, and it isn’t done snowing yet.

Before you read this recipe, I want you to close your eyes and imagine yourself on a beach this summer,darkly tanned and wearing that swim suit that shows off your toned and tanned body. Okay, now open your eyes and go look in the mirror. Now, make the following meal and jump back on that treadmill, then lift weights for half an hour.

You’ll get there. Just keep at it.

VEGETABLE TOFU KEBOBS

Serves 8

12 oz. firm tofu, pressed and weighted, cut into cubes

2 tbsp. red wine vinegar

2 tbsp. reduced-sodium soy sauce

2 cloves garlic

2 tbsp. olive oil

fresh ground pepper to taste

1 medium red bell pepper, seeded and cut into 8 squares

8 small button mushrooms

1 small yellow squash, cut into 8 slices

8 sweet onions, cutting into 8 wedges

  • Place the tofu in a shallow dish.  In a cup, whisk together 2 tbsp vinegar, 2 tbsp. soy sauce, 2 cloves of garlic, 2 tbsp. olive oil and pepper.  Pour over the tofu and marinate for at least 1 hour, turning to coat each side.
  • Preheat the broiler.
  • Transfer the tofu to a pepper towel to drain.  Thread the tofu and vegetables onto 8 skewers and lightly brush the vegetables with the marinade.  Broil, turning the kebabs, until the vegetables are done, about 2 to 3 minutes per side, turn 4 times.
