This morning we have cloud cover and rain with areas of fog. Patchy fog this afternoon. Warmer with highs in the mid 40s. South winds 15 to 20 mph. Gusts up to 35 mph this afternoon.

Tonight we’ll have partly cloudy skies with rain likely in the evening, then clear after midnight. Patchy fog. Lows in the lower 20s. West winds 10 to 15 mph.

We’ve received 0.18inches of rain/snow melt here over the past 24 hours, and it is a long way from being done.

This recipe has a bit more “weight” to it, but is still good for you. “Try it, you’ll like it.”

BAKED OREGANO CHICKEN

4 servings (plus 2 chicken breasts for another meal; see recipe below)

¼ cup dry bread crumbs

2 tbsp grated Parmesan cheese

¼ tsp dried oregano leaves

1/8 tsp garlic salt

1/8 tsp pepper

¼ cup Dijon mustard

6 boneless, skinless chicken breast halves (1 3/4 to 2 lbs)

Heat oven to 425°. Spray jelly roll pan, 15½x10½x1 inch, with cooking spray.  Mix bread crumbs, cheese, oregano, garlic salt and pepper. Spread mustard on all sides of 4 chicken breasts. Cover mustard-coated chicken breasts with bread crumb mixture. Place all 6 chicken breasts in pan.  Bake uncovered about 25 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut. Cover and refrigerate the 2 uncoated chicken breast.  Serve with a side of spaghetti-perhaps leftover spaghetti-along with Italian green beans, fresh pears and bread-sticks is an easy way to finish off this meal.
