The weather is going to be crumby again today. This fish dish has 188 calories to it, so make it for dinner, right? Keep thinking about today’s appointment with that bathroom scale.

SALMON TARRAGON

Serves:  4

1 lb. salmon fillet, cut into 4 pieces

¼ cup fresh lemon juice

½ tsp. dried tarragon

Pepper

1 tbsp. pimentos, drained, chopped

  • Wash and pat dry fish fillets.
  • Mix ¼ cup fresh lemon juice, ½ tsp. tarragon and a few dashes of pepper.
  • Arrange fish in a glass baking dish, thick sides outward, and spoon marinade over fillets.  Let rest a few minutes to absorb flavor.
  • Cover with wax paper and microwave on Medium High (70%) for 5 to 6 minutes, until fish flakes easily when pierced with fork.  Turn mid-cycle for even cooking.  Garnish with pimentos.
