#MEwx Warm, foggy and an Angel Food Ice Cream cake

The Boston Red Sox defeated the Tampa Bay Rays yesterday afternoon 4-3, we swept ‘em! We are now 9 and 12.

This morning it’s cloudy with areas of fog. A chance of showers this afternoon with visibility one quarter mile or less. Highs around 60°F. North

Tonight we’ll have showers with patchy fog. Lows in the mid 40s. North winds 10 to 15 mph with gusts up to 25 mph.

We received  0.13 inches of rain here over the past 24 hours.

Now that the temps are “warm” again, why not really get ready for summer with this dessert? It’s an easy one to make, just get the ingredients and at least one pre-teen who likes to eat dessert.

ANGEL FOOD ICE CREAM CAKE

Serves 15

1 Angel food cake (8 in)

Sugar =OR= Sugar substitute to taste

1/2 gal. vanilla ice cream, slightly softened

2 qt fresh strawberries            

Cut the cake in half; tear one half into small pieces and set aside.  Cut the other half into 12-14 thin slices; arrange in the bottom of a wax paper lined 13" x 9" x 2" baking pan, overlapping as needed.  Spread softened ice cream over cake, pressing down to smooth. Gently press the small cake pieces into the ice cream. Cover and freeze.  Just before serving, slice strawberries and sweeten to taste. Cut dessert into squares and top with strawberries.
