Below are 2 more breakfast recipes, one is specifically for microwave use (yes, I heard you). The other one is conventional, and both are quick and easy. Before this week is out I will have posted a variety of breakfast recipes that should remove any excuse you or your kids have for NOT having breakfast before leaving the house.

 

Breakfast Egg sandwich using egg substitute

Slice one English muffin in half and toast it.

Find a dish that is roughly the same size of the English muffin

Using eggbeaters, usually found in a pint container,

Pour the equivalent of one egg, about ¼ cup of eggbeater into the dish and microwave it on high for about one minute.

Then remove it from the dish directly on the English muffin. Place one slice of your favorite cheese on it and its done.

Serves one

You can add some diced up pre-cooked sausage links or paddies to it too.

Note: Eggbeaters are much lower in fat and collesteral than regular eggs.  Be advised that, if you add cheese and some sausage or bacon to it, you’re raising the fat/colesteral level. So act accordingly.

 

BREAKFAST POPOVERS WITH PARMESAN

Serves:  8 popovers

½ cup liquid egg substitute

1¼ cups whole grain flour

1 cup + 2 tbsp. fat-free milk

1 tbsp. trans-fat margarine, melted

3 tbsp. grated Parmesan cheese

  • Preheat the oven to 375 degrees F.  Coat 8 custard cups or popover-pan with cooking spray.
  • Whisk ½ cup egg substitute in a medium bowl.  Add 1¼ cups whole grain flour, 1 cup + 2 tbsp. fat free milk, and 1 tbsp. margarine and whisk until the ingredients are combined.  Stir in 3 tbsp. cheese.
  • Evenly divide the batter among the prepared cups.  Place the cups on a large baking sheet.
  • Bake for 30 minutes, or until the popovers are puffed and golden.  Remove the popovers from the cups and serve hot.
