Holiday Pumpkin Bread

3  eggs                                2 1/2 cups flour

1 - 15 oz can pumpkin         2 cups sugar

3/4 cup oil                            1 1/2 tea baking soda

1/2 cup water                        1 1/4 tea salt

1/2 cup raisins - optional      3/4 tea nutmeg

1/2 cup nuts - optional          3/4 tea cinnamon

In large bowl mix eggs, pumpkin, oil and water.   In another bowl, put all dry ingredients.

Gradually add dry ingredients to pumpkin mixture.  Mix till smooth.  Add nuts/raisins.

Pour into 2- 9”  or 3 - 8” pans well greased loaf pans.  (recently I’ve started to use Pam to grease the pans

and it works fine)

Bake at 350 for 40 - 45 minutes.  Let set a few minutes before taking them out of the pans.
