SQUASH MIX WITH CHICKEN

Serves 4

½ cup chopped onion

½ cup sliced celery

1 tsp reduced-calorie margarine, melted

2 ½ cups sliced yellow squash

1 cup sliced zucchini

½ cup chopped, cooked chicken

2 tbsp water

½ tsp salt

1/8 tsp red pepper

1/8 tsp pepper

 

Sauté onion and celery in margarine in a large skillet until tender.  Stir in squash and remaining ingredients.  Cover and bring to a boil.  Reduce heat, and simmer 8 to 10 minutes or until vegetables are tender, stirring frequently.  Transfer mixture to a serving dish, and serve hot.
