#MEwx snowing, rain possible later and Summer Chicken Kabobs

This morning we have snow, then a chance of snow or rain this afternoon. Additional snow accumulation up to 1 inch. Highs in the mid 30s with north winds around 10 mph, becoming light and variable.

Tonight we'll have cloudy conditions with a 50 percent chance of snow. Lows in the mid 20s with light and variable winds.

Visibility is very poor outside because it's still snowing in our area.

We received roughly 2 inches of snow here over the past 24 hours so far, and it's still dustin' out there.

SUMMER CHICKEN KABOBS

 

4 servings/serving size:  3 oz chicken

 

¼ cup lime juice

2 tbsp olive oil

1 tbsp minced parsley

½ tsp dried thyme

1 garlic clove, minced

fresh ground pepper

2 whole boneless, skinless chicken breasts, cubed

1 small yellow squash, cut into 2-inch pieces

1 small zucchini, cut into 1-inch pieces

4 large cherry tomatoes

 

In a shallow dish, combine lime juice, oil, parsley, thyme, garlic, and pepper; mix well.  Add chicken, yellow squash, and zucchini, tossing to coat.  Cover and refrigerate for 2 hours.  Alternate chicken, squash, and zucchini onto each skewers.  Grill 4 inches from heat for 10 minutes, turning frequently.  Add cherry tomatoes to each skewer during the last 1 minute of cooking.   Remove from heat and serve.
