We're still under a flood watch so don't drive through deep puddles!

This morning we have more rain with isolated thunderstorms during morning hours, then showers likely this afternoon. Some thunderstorms may produce heavy rainfall this morning with highs in the lower 60s. Winds are Northwest 10 to 15 mph gusting to 30 mph.

Tonight we'll have mostly cloudy conditions with a chance of rain showers during evening hours, turning partly cloudy after midnight. Lows will be in the mid 30s with south winds around 10 mph.

HOLIDAY PUMPKIN CHEESECAKE

Serves 8

1 (8 oz) packages Philadelphia fat-free cream cheese

1 (4 serving) package JELLO sugar-free instant butterscotch pudding mix

2/3 cup nonfat dry milk

1 (15 oz) can pumpkin

1 ½ tsp pumpkin pie spice

¾ cup Cool Whip Lite

1 (6 oz) graham cracker piecrust

2 tbsp chopped pecans

 

In a large bowl, stir cream cheese with a spoon until soft.  Add dry pudding mix, dry milk powder, pumpkin, and pumpkin pie spice.  Mix well using a wire whisk.  Blend in ¼ cup Cool Whip Lite.  Spread mixture into piecrust.  Evenly spread remaining ½ cup Cool Whip Lite over filling.  Evenly sprinkle pecans over top.  Refrigerate for at least 2 hours.   Cut into 8 servings.
