#MEwx Cold, windy and snowy with Cheese Cake Stuffed Strawberries

This morning we have snow with areas of blowing snow. Snow accumulation of 2 to 4 inches are possible. Highs around 17 °F with Northeast winds 10 to 15 mph gusting to 25 mph.

Tonight we'll have mostly cloudy skies during evening hours, becoming partly cloudy. Lows will drop to around 10 above zero with Northeast winds around 10 mph gusting to 20 mph. Wind chill values can drop as low as zero.

We haven't had any additional rain or snow here over the past 24 hours, but that's about to end.

Next time you spot some strawberries imported from someplace that is still growing them, buy a quart or two of them (yes, I know how expensive they'll be this time of year here in Maine), and make these as a holiday goodie.

Cheesecake Stuffed Strawberries

Ingredients:
-1 lb large strawberries
-8 oz. cream cheese, softened (can use 1/3 less fat)
-3-4 tbsp powdered sugar (4 tbsp for a sweeter filling)
-1 tsp vanilla extract
-graham cracker crumbsor melted chocolate
Directions:
1. Rinse strawberries and cut around the top of the strawberry. Remove the top and clean out with a paring knife, if necessary (some may already be hollow inside). Prep all strawberries and set aside.
2. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy. Add cream cheese mix to a piping bag or ziploc with the corner snipped off. Fill strawberries with cheesecake mixture. Once strawberries are filled, dip the top in graham cracker crumbs or melted chocolate. If not serving immediately, refrigerate until serving.
