#MEwx Warm, clouds and overall cooler with Zucchini Quiche

Ya know that massive Zucchini in the garden next to your garage threatening to consume it? Here's what you do with it. First, you need to kill it, then…

ZUCCHINI QUICHE

Serves:  8

1 tsp. cornstarch

¼ tsp. dried whole oregano

1 cup canned, stewed tomatoes

1½ cups skim milk

4 eggs

1 tbsp flour

2 cups shredded zucchini

½ cup chopped onion

½ cup shredded Swiss cheese

½ cup shredded low-fat process American cheese

2 tbsp. grated Parmesan cheese

Vegetable cooking spray

 

  • Combine 1 tsp. cornstarch and ¼ tsp. oregano in a small saucepan.
  • Add 1 cup tomatoes; stirring well; bring to a boil.  Reduce heat, and simmer 2 minutes or until thickened.  Keep warm.
  • Combine 1 ½ cups milk, 4 eggs, and 1 tbsp. flour in a large bowl; beat well using a wire whisk.  Add 2 cups zucchini, ¼ cup onion, and ½ cup shredded Swiss cheese, ½ cup Low fat American cheese, and 2 tbsp parmesan cheese, stirring well.
  • Pour egg mixture into a 9-inch round quiche dish coated with cooking spray.  Bake at 350 degrees for 1 hour.
  • Spoon tomato mixture over quiche.  Cut into wedges, and serve warm.
