HALIBUT STEAKS MARENGO

Serves 4

1 ¼ lbs halibut steaks

Dash salt and pepper

1 medium tomato, diced

¼ cup fresh mushrooms, sliced

1 ¼ cup onion, sliced

¼ cup celery, diced

1 tbsp lemon juice

1 tbsp canola oil

¼ tsp dried thyme

Parsley, chopped, for garnish

 

1.                  Place fish in shallow baking dish and sprinkle with salt and pepper.  Top with diced tomato and set aside.

2.                  In a 2-cup measure, mix mushrooms, onion, celery, lemon juice, oil, and thyme.  Cover with vented plastic wrap, and microwave on HIGH for 2 to 3 minutes.  Spoon over fish.

3.                  Microwave fish, covered with wax paper, for 6 minutes on HIGH.  Halibut is cooked if it flakes easily when pierced with a fork.  Garnish with fresh parsley.
