#MEwx Cloudy, rainy all day and Beef Shish Kabobs for dinner

This morning we have showers likely, then rain with a chance of thunderstorms this afternoon. Highs in the mid 60s with light and variable winds.

Tonight we'll have cloudy skies with showers and a chance of thunderstorms during evening hours, then partly cloudy with a chance of showers after midnight. Patchy fog. Lows will be in the upper 50s with light and variable winds, becoming west around 10 mph after midnight.

We didn't receive any rain here  over the past 24 hours.

Summer is almost completely over, so why not have a final Shish Kabob meal?

BEEF SHISH KABOBS

Serves 8

1/3 cup olive oil

¼ cup red wine vinegar

1 tbsp. lite soy sauce

1 garlic clove, minced

1 tbsp. lemon juice

Fresh ground pepper

2 lb. lean beef, cubed

2 large bell peppers, red, and green, cut into 1-inch pieces

1 lb. mushrooms, steamed

1 large tomato, cut into wedges

1 medium onion, quartered

 

  • 1/3 cup olive oil, ¼ cup red wine vinegar, 1 tbsp. lite soy sauce, 1 garlic clove, 1 tbsp. lemon juice, fresh ground pepper and pour over the beef cubes.  Let marinate 3 to 4 hours or overnight.
  • Place beef on skewers, alternating with 2 peppers, 1 lb. mushroom caps,  one tomatoes, and 1 onion.
  • Grill over medium heat, turning and basting with marinade.  Arrange skewers on a platter to serve.
