We didn’t receive any snow or rain here over the past 24 hours, but we still have a lot of melting going on out there, so watch for water-covered ice patches.

Okay, for those of you who chastise me for not posting “healthy” recipes, this one is for you.

MARINATED MUSHROOMS

 

Serves 4

 

2 cups fresh whole mushrooms

1 cup hot water

½ cup fat free Italian dressing

 

In a saucepan, combine mushrooms and water.  Bring mixture to a boil.  Drain.  Place mushrooms in a small bowl.  Pour Italian dressing over hot mushrooms.   Stir gently to coat.  Cover and refrigerate at least 2 hours.  Gently stir again just before serving.
