How about a real good breakfast?

WAFFLES     

Serves:  12 – 4 inch waffles

2 cups reduced fat baking mix

1 1/3 cup fat-free milk

2 tbsp. vegetable oil

1 egg

NOTE: use a one-fourth dry measuring cup as the scoop per side of iron – IE: the grid is divided in half, so you’ll need two one-fourth cups per waffle cooking cycle.

  • Spray unheated waffle iron with cooking spray; then heat waffle iron.  OR Heat waffle iron; then grease with vegetable oil.
  • Stir 2 cups baking mix, 1 1/3 cup milk, 2 tbsp. vegetable oil and 1 egg until blended.  Pour onto center of hot waffle iron; close lid.
  • Bake about 5 minutes or until steaming stops.  Carefully remove waffle. 

NOTES: Time each waffle at 3 to 4 minutes – spray nonstick on iron after each waffle is done and remember to close the lid before adding batter for about 30 second just to heat up the top half of the iron again.
